Sundried Tomatoes Salsa

I made this Salsa for a party and forgot to take pics : ( 
As you all know I take lot of pics and post step by step instructions with pics. The salsa was a hit so I decided to post the recipe but only have few photos of it.   Then I thought this would be good test to see if feed burner sends this to my subscribers as they have not been receiving my feeds. I checked what was the problem and it says that I have too many pics. So I thought let me share this recipe with less pics and see if the subscribers gets this in their email.
I did make a lot of it, and used some for the party and some I took it to work and at both places everyone loved it !

Here are the ingredients I used:
  • 3/4 of  Sun dried tomatoes Jar with its olive oil (from Costco)
  • 1 20 oz can of crushed tomatoes
  • 2-3 Fresh Jalapeno peppers
  • 2-3 Fresh sweet red peppers
  • 1 small green pepper
  • 1 red onion
  • 1 yellow or white onion
  • 3-4 green onions
  • 10 cloves of garlic
  • 1 cooked beet  (I used pickled beet from jar in its juice. Costco again, they should pay me right? ;)
  • 1 cup juice from pickled Jalapeno jar
  • 1/4 cup of pickled Jalapenos
  • 1 cup of Red Wine Vinegar
  • Juice from 1 fresh lime
  •  1 bunch of cilantro
  • 2-3 tablespoon of olive oil
  • 2 teaspoons of Cumin seeds
  • 3 tablespoon of Taco seasoning
  • 1 tablespoon of ground cumin powder
  • Salt to taste




Method:
  • Chop all the peppers and onions.
  • Heat oil in a pan.
  • When oil is hot, add cumin seeds.
  • When these crackle, add taco seasoning and immediately followed by garlic and all the chopped onions and peppers.
  • Saute for few min.
  • Add salt and ground cumin powder.
  • Saute until soft.
  • Turn the heat off and let the contents cool.
  • In the mean time, add sun dried tomatoes with oil from jar in food processor.
  • Puree.
  • Add crush tomatoes, cooked or pickled beets from the jar with its juice.
  • Add pickled jalapenos with its vinegar.
  • Puree again until smooth paste.
  • Set aside.
  • Puree sauteed onions and peppers in food processor and add to the tomato puree.
  • Add lime juice. 

  • Mix well or puree until smooth and everything is well incorporated. 
  • Add red wine vinegar and mix well.
  • Serve with your favorite chips.





  • You can adjust the amount of salt to taste and adjust tartness by amount of vinegar and lime juice to your taste.
  • You can make this ahead of time and freeze it,  stays very fresh.
