No Bake Mango Cheese Cake with Kefir Mango Smoothie

This cheese cake is delicious and does not require any baking. It is light, creamy and with just the right amount of sweetness.








Ingredients:
  • 1 pack of Gullon Creme Tropical biscuits ~ 32 petite biscuits (you can use graham crackers, or digestive cookies or Petite biscuit crumbs)
  • These will yield 2 cups of crumbs
  • 1/3 cup of butter
  • 1/4 cup of Organic Coconut Sugar (or brown sugar)
  • 2 8 oz packs of cream cheese
  • 2 packets of unflavored gelatin
  • 1/2 cup of water
  • Juice for 1  fresh lime
  • 16 oz of Mango flavored Lifeway Kefir low fat yogurt smoothie  (you can use sour cream, or heavy cream if this is not available)
  • 16 oz of Mango pulp (Sweetened canned available at Indian grocer)
  •  3/4 cup to 1 cup of sugar (to desired sweetness)
  • 1 mango for garnish
  • You will need a spring form cake pan for this 
  • Also will need few fresh strawberry or raspberry for garnish.
  • will need 1 table spoon of powdered sugar and 1 table spoon of granulated sugar for sliced strawberries.
  • Few mint leaves for garnish.
Method:
  • Crush the biscuits or graham cracker in food processor.
  • Mix melted butter and coconut sugar or brow sugar.
  • Add biscuits crumbs to this and press the mixture on bottom of spring form cake pan.
  • Refrigerate while you prepare the batter.












 







  • Boil 1/2 cup of water and mix unflavored gelatin until dissolved. 
  • Take out any lumps that don't dissolve.
  • In a food processor, mix softened cream cheese, lime juice.
  • Mix mango pulp and Kefir mango smoothie or fresh creme and add  this to lime and cream cheese. 
  • Add gelatin mix.


  • Mix in food processor until smooth.
  • Add sugar.
  • For variation you can add melted white chocolate in the batter. (you may have to adjust the amout of sugar then)
  • Mix until batter is smooth.













 



  • Pour the batter in to the spring form with crumbs pressed in the bottom.
  • Refrigerate it for 6-8 hours. 





  • When cake is set take it out of fridge.
  • Peel and slice mango to desired sizes pieces, cubes or slices.
  • Slice strawberries and mix with sugar toss well.
  • Decorate the cake with mango slices and strawberries slices.
  • Refrigerate again until ready to serve. 
  • Can garnish it with few mint leaves for color.
  • Place the spring form pan on serving cake platter and open the spring form pan


















Serve chilled.
