Edamame is another rich source of protein, dietary fiber and micro nutrients particularly Folate, Manganese, Phosphorus and vitamin K.
Decided to make savory veggie cutlet patties with these two protein rich food and they came out pretty good. This recipes yields about 18 pieces depending on the size of patties.
Ingredients:
- 3 cups of Phool Makhana (Lotus seeds)
- 1 cup of shelled Edamame frozen
- 1/4 cup of Cashews
- 2 Potatoes boiled and mashed
- 1 Red or yellow Onion finely chopped
- Cilantro one small bunch finely chopped
- 1/8 cup of oil
- 1-2 Serrano pepper finely chopped (if want less spicy can only use one)
- Salt to taste
- 1/2 teaspoon of black salt
- 1 teaspoon of roasted cumin seeds powder
- 1 teaspoon of cayenne pepper powder
- 1 teaspoon of turmeric
- 1/2 teaspoon of coarsely ground black pepper
- Juice from one fresh lime or 2 teaspoon of dried Mango powder
- Oil for cooking (for shallow frying)
Method:
- Heat oil in a pan.
- Add cashews and Phool Makhana.
- Roast it on medium low heat until become crispy and cashew light brown.
- Turn the heat off and let them cool.
- Once cool grind them coarsely in food processor.
- Set aside.
- Cook edamame in microwave per instruction on frozen packet.
- Grind the boil edamame in food processor, may need to add 1/8 cup of water if too dry.
- In a bowl take mashed potatoes.
- Add chopped onions, chilies, Cilantro and edamame paste.
- Add roasted cashews and lotus seeds powder salts, lime juice and all the spices.
- Mix well.
- Divide the mixture in to small golf size ball and flatten them in patties shape.
- Heat griddle and add some oil and shallow fry the patties on each side until golden brown and crispy. (about 3-4 min on each side)
- Serve them hot with cilantro mint chutney or chili garlic sauce or with Ketch up.
