Cabbage like my Mom used to make.
Ingredients:
1 small size finely chopped cabbage
1 finely sliced green pepper
3 chopped medium tomatoes
1 finely chopped jalapeno pepper
2 table spoon vegetable oil
1 teaspoon cumin seeds
½ teaspoon black mustard
½ teaspoon fenugreek seeds
¼ teaspoon asafetida
1 teaspoon turmeric powder
½ teaspoon cayenne pepper powder
1 teaspoon paprika powder
2 table spoon coriander powder
1 table spoon mango powder
2 teaspoon of salt (or to taste)
Method:
• Heat oil in a shallow frying pan
• When oil is hot, add cumin seeds, fenugreek seeds and mustard seeds.
• As soon as they crackle, add asafetida.
• Add cabbage, topped with green peppers, jalapenos, and tomatoes
• Let it sit on heated oil on high heat for 3-4 min, (do not stir yet, add all the spices and salt on top
• Mix well, keep it on high flame
• Cook to desired crunchiness of cabbage and peppers, with occasional stirring.
• Garnish with cilantro and serve as vegetable side dish with lunch or dinner.
Note: You may modify the quantity of cayenne pepper based on desired heat.
You may add green peas to this for variation.
