Cilantro Rice


Cilantro Rice

Ingredients:

2 cups of Long grain rice washed, rinsed and drained.

4 cups of water

2 teaspoon of salt (or to taste)

2 tablespoon of oil

Juice from one fresh big lime

¼ cup of chopped fresh cilantro (can add more if desired)


Method:

• Add 4 cups of water to rinsed rice in a 5 quart corning ware casserole.

• Add salt and olive oil and mix well.

• Cover the container with glass cover; microwave it for 12 min at high power and 12 min at 50% power.

• When microwave time is up, take the rice out of oven, and let it sit covered for 5 min.

• Remove the cover and transfer rice to serving dish.

• Add Lime juice, toss rice with wooden spatula.

• Add chopped cilantro leaves just before serving and again toss with wooden spatula.

• Serve hot.
