Quick Sooji (Cream of Wheat) Burfi
This is the quickest dessert to make.. and delicious too. It takes about 15-20 min to make.
I make this without adding any water. I like its texture better this way, you have little crunch of nuts and grainy texture from sooji (cream of wheat) with touch of divine sweetness and gooey taste of condensed milk.
This recipe yields about 25 squares.
Ingredients:
* 3 cups of coarse sooji (available at Local Indian grocers) you can use cream of wheat, if don't have sooji handy, but be sure to use the finer kind of cream of wheat if buying it from local grocery store)
* 1 can of Sweetened Condensed Milk
* 1 stick of butter or 1/2 cup of ghee
* 1/4 cup of slivered almonds + some extra for garnish
* 1/4 cup of chopped raw pistachios unsalted + some extra for garnish
* 1/4 cup of chopped cashews unsalted + some extra for garnish
* 1/2 teaspoon of freshly ground cardamom seeds
Method:
• Melt butter in a pan.
• On medium heat let butter simmer for 30 sec until clear (like appearance of ghee, or you can use ghee)
• Add sooji and nuts to this and fry on medium heat with constant stirring with spatula, until it is lightly golden in color and emits nice aroma. (keep the nuts for garnishing aside)
• Turn the stove off and add cardamom powder and can of condensed milk to hot sooji.
• Stir and mix well until everything is nice incorporated.
• Pour this in a greased pyrex square dish.
• Spread little bit of butter of ghee on back of spatula and spread it evenly inthe pan smoothing out the surface.
• Sprinkle all the nuts evenly on this and press them in to burfi batter.
• Place the pan in fridge for about 10 min.
• Cut squares and serve.
