Almond Honey Crunch Ice Cream
You will need an electric ice cream maker for this. This recipe yields 1.5 quarts of yummy homemade ice cream.
Ingredients to make Ice cream:
* 2 cups half and half or heavy cream
* 3 cups almond milk
* 1 cup of sliced almonds
* 1/2 a can of condensed milk
* 2 eggs (optional)
* 1 teaspoon of Kewra essence ** (for more info see below at end of this post)
* 1/2 teaspoon of Ice cream essence or vanilla
Ingredients for serving:
* Honey to drizzle
* 2 cups of sliced almond
Method:
* Roast all three cups of raw sliced almond on a skillet on medium heat, set aside and let them cool.
* Separate one cup to add to the ice cream and set aside 2 cups of almonds for garnish/serving.
* Beat eggs, mix with heavy cream or half and half, almond milk, condensed milk.
* Add 1 cup of roasted almonds, Kewra and ice cream essence.
* Pour this mix in the chilled ice cream maker container.
* Follow instructions on the ice cream maker.
* Churn the contents in the ice cream maker for 35 min.
* When done, you can transfer the ice cream in covered container and freeze or serve immediately.
* If you do freeze it in a container, you may have to take it out for 10 min before serving to scoop it out, as it may harden a little.
Serving instructions:
* Scoop out the ice cream in serving bowls, generously sprinkle roasted almonds on the ice cream and drizzle with Honey.
* Yummy tropical honey almond crunch ice cream is ready to be served :)
** What is Kewra Essence: This is an extract that's distilled from the Pandanus flowers and is used to provide flavors for meat, drinks, and desserts in India and Southeast Asia.......Pandanus amaryllifolius is a tropical plant in the screw pine genus which is known commonly as pandan and is used widely in Southeast Asian cooking as a flavoring. The plant is rare in the wild but is widely cultivated. It is an upright green plant with fan-shaped sprays of long, narrow, blade like leaves and woody aerial roots. The plant is sterile, flowers only very rarely, and is propagated by cuttings. ...Kewra essence is available in local Indian market and easily available throughout India.
