South Indian Dal Vada





























This recipes yields about 45 pieces of this yummy finger food.



Ingredients:



* 2 cups Chana dal

* 2 cups green split peas (or you can use one cup green split peas and one cup toor dal)

* 1 large red onion sliced

* 5-6 fresh red chili pods (can use dry pods if fresh not available)

* 2" piece of ginger

* 6 pods of garlic

* 1 Jalapeno pepper or 2 Serrano pepper

* 10-15 fresh curry leaves from 1 sprig

* 1 small bunch of cilantro leaves

* 2 tablespoons of Sambar or Rasam powder (available at local Indian Grocer)

* 1 table spoon of cumin powder

* 2 teaspoons of crushed red pepper

* 1 teaspoon of cayenne pepper powder

* 1 tablespoon of mango powder

* 2 teaspoon of salt or to taste

* oil for deep frying



Method:


* Soak the chana dal and split peas in water for 4 hours.

* Slice onion, chop cilantro, red chili pods, curry leaves.

* Finely chop garlic, ginger and Jalapeno pepper.

* Drain all water from soaked dal, set aside 1/3 cup of soaked dal.

* Grind the rest of dal in food processor to coarse consistency.

* Mix all the dry spices in to sliced onions, chopped cilantro, red chili pods, curry leaves, garlic, ginger and Jalapeno pepper, add the soaked 1/3 dal (that you set aside) to this.

* Mix well.

* Add all of the above to coarsely ground dal paste, mix well.

* Heat oil in frying pan to 375 degrees F.

* Take a portion of the dal mix on the palm of your hand, make ball and flatten and each ball to make a small flat round patty as shown in picture.

* Fry these small thin patties (vada) in heated oil until golden brown.

* Serve hot with cilantro chutney, or coconut chutney (recipes on this blog)or with Ketchup.
