Shalgam ka Bhartha / Curried Mashed Turnips







Ingredients:

  •  5 Turnips  washed, peeled and cut into cubes
  • 1 Green pepper (capsicum)
  • 1 bunch of green onions (5-6 in a bunch)

  • 4 green chillies
  • 4 cloves of garlic
  • 1 inch of ginger
  • 1  onion
  • 2  tomatoes
  • 3 table spoon of coriander powder
  • 1 teaspoon of roasted cumin powder
  • 2 table spoon of Mango powder (amchoor)
  • 2 teaspoon of cayenne pepper
  • 1 teaspoon of Turmeric powder
  • Salt to taste
  • 1/4 cup of cilantro. chopped divided in two parts
  • 1/4 cup of vegetable/cooking oil
  • 1 teaspoon of cumin seeds
  • 1/4 teaspoon of hing
  • 2 bay leaves
  • 2 pods of dried red chilies 

Method
  • Pressure cook turnip cubes
  • Mash the turnips to paste but not very fine (use potato masher)
  • Chop onion, garlic, ginger and green pepper together in food processor set aside
  • Crush tomatoes in food processor, add part of cilantro and chop together
  • Heat oil in the pan
  • Add cumin seeds when oil is hot, when these crackle, add hing powder, red chili pods and bay leaves
  • Add onion, ginger and garlic paste
  • Saute until golden brown.
  • Add crushed tomatoes
  • Add salt and stir and cook .
  • Add all the dry spices and and mashed turnip.
  • Add chopped green onions.
  • Cook until all water evaporates.
  • Garnish it with remaining cilantro and serve it with Naan or Chapaties.
