This Salsa offers a refreshing flavor of pineapple and cucumbers with a little kick. It is perfect for summer and can be served as Salsa with your favorite corn chips or can be used as topping to any of the meat or seafood dishes.
Ingredients:
- 1 cup fresh cut and cubed pineapple
- 1/2 of seedless English cucumber peeled and chopped in to cubes
- 2 spring onions with green attached, chopped
- 1 small bunch of cilantro, divided in to two parts
- Juice from 1 fresh lime
- 2 cloves of garlic
- 1 small fresh jalapeno pepper (seeded if don't want it very hot, I didn't seed it)
- 1/8 cup of sugar (if want more sweet can use 1/4 cup)
- 1/4 cup of Apple cider vinegar
- Salt to taste
- Chop and puree all the ingredients to desired consistency in blender.
- Add apple cider vinegar.
- Add remaining half of cilantro, chop and puree some more.
- Serve with corn chips.
