You can make cookies and brownies from ready made mixes or from scratch as follows. I made both dough from scratch separately and baked the brownies first then mixed the crumbled brownies with Nutella and stuffed this filling in to cookie dough and baked it.
Ingredients for cookie dough:
- 1/2 cup of butter ( 1 stick)
- 6 oz chocolate chips
- 3/4 cup of chopped nuts of any choice
- 1 cup flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon instant espresso coffee powder
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp vanilla
- 1 egg
- 1 and 1/4 cup of ground Oatmeal
Method to make cookie dough:
• Measure Oatmeal and grind it in a blender to fine powder.
• Cream the butter and both sugars.
• Add egg and vanilla, mix together with flour, oatmeal, salt, baking powder, coffee powder and baking soda.
• Add chocolate chips, and chopped nuts.
• Mix well.
• Set aside.
Ingredients for Brownies:
- 1 cup sugar
- 1/2 cup flour
- 1/3 cup unsweetened cocoa
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup chopped nuts
- 1 teaspoon vanilla
- 1/2 cup vegetable cooking oil or butter
- 2 eggs
- 3 tables spoon of Nutella
Method to make Brownies: - Mix all dry ingredients together.
- Preheat oven at 325 * F
- Add eggs, oil and vanilla to dry ingredients and mix with fork until well blended.
- Keep the Nutella aside do not mix with batter before baking.
- Pour in to 9 x 9 greased pan or silicone pan and bake for 20-25 min , or until the toothpick comes out slightly moist with batter. Do not over bake them.
- Cool the brownies and crumble them.
- Add Nutella to cooled and crumbled brownies.
- Mix well.
- Roll the cookie dough in to balls, flatten the ball in palm of your hand.
- Fill the flattend cookie dough with brownie and nutella mix.
- Roll in to ball again with outer covering of cookie dough. (These are large cookies)
- Place them on cookie sheet.
- Preheat the oven at 350 * F.
- Bake the cookies for 10 min.
- This recipe will yield 10-12 large cookies.
