Moist Chocolate Chip Cappuccino Muffins with Instant Oatmeal



We all have instant oatmeal packets that we know, we are not going to use, especially if you shop at Costco or any other wholesale club and ended up buying them as an impulsive buy when you were having this health food mania.
Same here, I had bought a big box of variety of "healthy" instant oatmeal mix.  I wanted to make something not so healthy which is little more desirable for everyone in my house hold to eat than instant oatmeal. I came across this recipe of brown sugar oatmeal muffins at Allrecipes.com
So I decided to do my own version.  Rather than making it from scratch like the recipe suggests I decided to use cake mix and make it in chocolate variety.

Actually to tell you the truth I totally changed the recipe and these came out very good.
This recipe yields 28 mini muffins.  I used silicon cup cake holders, but you can use paper cup cake holders.

Ingredients:
  • 1 package of  Devil Food Cake Mix
  • 4 eggs
  • 3/4 cup oil
  • 1 can of evaporated milk
  • 1 and 1/2 cup of brown sugar (I used coconut brown sugar)
  • 1 and 1/2 teaspoon cinnamon
  • 1 and 1/2 tbls of instant coffee granules
  •  4 packets of instant oatmeal mix (I used apple cinnamon, with pumpkin seeds, but you can use any)

  • 3/4 cup of mini chocolate chips morsel
  • You can use 1/2 cup of chopped walnuts  (but I did not use it this time)
  • 1/2 teaspoon salt
  • 2 teaspoon of Baking powder












Method:
  • Preheat oven to 400 degrees.
  • Combine eggs, oil and evaporated milk and whisk it in electric mixture.
  • Add Instant oatmeal from 4 packets, one pack of devil food cake mix .
  • Add brown sugar, coffee granules, salt, baking powder and mix well.
  • Fold in chocolate chips and nuts if using any.

  • Spray the silicone cup cake holders with cooking oil spray.
  • Spoon the batter in each cupcake holder (placed in the muffin tray) filling each 2/3 full, do not  overfill.
  • You can sprinkle some chocolate chip on top of each muffin. (I forgot to do this)
  • Bake in preheated oven for 16-18 min or until the toothpick comes out clean. Do not over bake them as they will turn out dry.
  • Cool them before serving.

















Suggestion: If you do not wish to make these muffins from cake mix,  you can use 2 cups of flour, 3/4 cup of cocoa powder,  2 tsp of baking soda, 2 tsp of baking powder, 1/2 teaspoon of salt, 1 can of evaporated milk, 1 and 1/2 cups of brown sugar, 3/4 cup of oil, 4 eggs, 4 packets of instant oatmeal (any flavor), 1 cup of chocolate chip morsels and 1/2 cup of chopped nuts, 1 and 1/2 tbls of instant coffee, 1 tbls of vanilla extract,  and 1 and 1/2 teaspoon cinnamon.
