Homemade Eggless Naan On the Stove with No Tandoor

I have tried, and tried to perfect the Naan recipe so many times, without the Tandoor oven. It has always been a  hit or a miss. I tried it on stone in the oven at Broiler setting, comes out ok but somewhat dry.  Then I saw couple of recipes on stove and thought let me try it this way.

I used my own ingredients and using the tava/griddle method.
I must say it came out to be very close to the Tandoor oven. You have to use an iron griddle with handle for this one, can't use non stick pan.
Caution: Be careful when turning the griddle, don't burn yourself.

Ingredients:
  • 2 teaspoon fast rising yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 cup luke warm water
  • Mix and all of the above, cover and  set aside for 5 min.

  • 2 and half cups AP flour
  • 1/2 cup yogurt
  • 2 tbls spoon oil
  • Mix all of the above  then add yeast mix.
  • Add 1/2  cup durum chapati flour and make the dough.
  • Grease the dough, cover and set aside for 1-2 hours to rise

  • When dough is risen, knead it for 5 min, slapping it on the counter top in between.
  • Divide in 6-8 balls.
  • Take some AP flour mixed with rice flour and roll the balls in the this flour mix.
  • Now with rolling pin roll in oblong shape.
  • You can use your hands to flatten these balls in to oblong shape.
  • I prefer rolling pin.

  • Heat the iron griddle (Tava) on stove.
  • Brush  water on one of the surface of rolled naan.
  • Place the wet side down on tava and let it cook on medium heat until you see the dough bubbling.

  • Make sure the other side is golden brown by peeking with spatula.
  • Now grab old of griddle with handle and invert it directly on the flame and since there is water on other side it should stick on griddle and won't fall.
  • Check it and cook until light golden brown specks appear on the naan.

  • Repeat the process.
  • Brush it with butter and serve hot with your favorite curry.
  • Nice flaky naan are ready.

  • You can finely chop cilantro, green chilies and garlic and press it on one side of rolled naan to make chili garlic naan with cilantro.
  • I see some recipes using baking powder and eggs but I prefer yeast to these as this gives naan nice pillow cushion like flakiness which is yummy.
Pictures speak thousand words, so I have lot of pictures for step by step instructions on this recipe and less description on how to make the naan this way. I hope it helps.  Keep trying and you will reach perfection too. You may develop your own style and method.  Enjoy !!
