Cappuccino Chocolate Chip Muffins

Serves/Makes: 6-10 Ready In: 30-60 minutes


1 3/4 cup unsifted all purpose flour
6 tablespoons butter, softened
1/4 cup Brown Sugar
1/2 cup granulated sugar
1/2 teaspoon Salt
1/2 cup Cocoa Powder
6 tablespoons Soft Butter
1 cup Sour Cream
1 cup Half And Half
2 Eggs
2 Oranges -- zest only
1/4 cup evaporated milk
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon instant coffee, dissolved in
2 tablespoons boiling water
1 tablespoon coffee flavored liquor, optional
1 cup chocolate chips


• Heat oven to 375F. Grease a muffin pan.
• In large bowl, beat on medium speed: butter and both sugars till light and fluffy.
• Beat in egg, sour cream, vanilla, dissolved coffee granules, orange zest, and coffee liquor until blended.

• In medium bowl, combine all dry ingredients.
• Add flour mixture to butter mixture, and milk, beating just until combined. Fold in chocolate chips. Divide batter among muffin pan cups.
• Bake 25 to 30 minutes or until centers spring back when lightly pressed.
• Cool 15 minutes before serving.
• Serve warm.
