Zucchini Bread


2 cups Zucchini (approx. 2 med)
3 cups all purpose flour
1 tsp baking soda
1/4 tsp baking powder
1 tsp cinnamon
1 tsp instant coffee granules (optional)
1 tsp salt
3 eggs
3 tsp vanilla
1 cup vegetable oil
1 cup brown sugar (packed)
1 cup sugar (if you want less sweet 1/2 cup would be okay too)
1 cup walnut (chopped)
1 cup chocolate chip morsels
1/2 cup sour cream


* Preheat the oven at 325 degrees F
* Grease two 9 x 5 x 3" loaf pans
* Combine flour, soda, baking soda, baking powder, salt, cinnamon, coffee granules.
* In a large bowl, beat eggs well, then beat in vanilla, oil, brown sugar, sugar and sour cream.
* Add flour mixture to egg mixture
* Mix at very low speed to combine ingredients then beat until well blended
* Stir in grated Zucchini, chopped nuts and chocolate morsels
* Pour in to greased pan
* Bakes at 325 for 1 hour and 20 min or until done
* Cool, store in plastic wrap and cut slices when ready to serve

May be frozen.
