This is a refreshing dessert salad with chunks of fresh fruit and nutty crunch, and with great blend of flavors. Goes well with any meal. It is a great dish for potlucks, winter holiday parties, office parties and summer picnics or cookouts.
Ingredients:
8 oz pack of cream cheese
8 oz pack of sour cream
Juice from one fresh lime
½ cup granulated white sugar
1 tsp vanilla
1 lb of green seedless grapes
1 lbs of red seedless grapes
1 lb of black seedless grapes (if not available can use more or green or red grapes or more of pineapple tidbids)
1 16 oz can of pineapple tidbits drained.
Topping:
½ cup brown sugar
½ cup of pecans crushed
½ cup of roasted salted or unsalted chopped pistachios nuts (shelled of course)
Method:
• Wash and stem grapes, set aside.
• Mix sour cream, cream cheese, granulated white sugar, lime juice and vanilla until blended.
• Stir grapes and pineapple into mixture.
• For topping: Combine brown sugar, and crushed pecans and pistachios.
• Pour half of grape pineapple cream cheese mix in a bowl.
• Top with half of the topping.
• Add remaining grape pineapple cream cheese mixture and sprinkle with remaining topping.
• Chill overnight.
