Yummy Key Lime Cheesecake


* 1/3 cup melted unsalted butter

* 2 cups Nabisco famous Chocolate wafer crumbs or graham cracker crumbs

* 2 envelopes unflavored gelatin

* 1/2 cup boiling water

* 1/2 cup fresh lime juice

* 3 eggs separated

* 1/4 cup of sugar

* 1 can of (14 oz) condensed milk

* 1 teaspoon grated fresh lime zest

* 1/2 cup sour cream

* 2 (8 oz) container of cream cheese

* 1 (8 oz) container of cool whip

* Thin Lime slices and some extra lime zest for garnish


* Combine crumbs, sugar and butter.

* Press on to bottom of 9" spring form pan or pie dish.

* Bake at 325 degree for 7-10 min, Cool.

* Dissolve gelatin in 1/2 cup of boiling water, stir until completed dissolved.

* Add egg yolks, 1/4 cup of sugar and lime zest.

* Cook over low heat for 5 min, stirring constantly, cool.

* Whip the cream cheese, sour cream, condensed milk and lime juice till smooth. Mix in the cool whip, then add the cooked mix. Mix with electric mixture until well blended.

* Beat egg white until foamy.

* Fold in to cream cheese mixture.

* Pour over crust: Garnish with lime slices if you like. Chill for about 3-4 hrs or until firm and set.


* Instead of using crumbs you can use 2 ready made graham cracker pie crusts, (9 inch) then you don't have to worry about using the spring form cake pan.

* If you cannot get fresh lime juice, you can buy it in concentrated form in most grocery stores.

* To cut down on calories you may use all ingredients in low fat variety for example condensed milk, sour cream, cream cheese and cool whip)

* You may add few drops of food coloring if desired.

* If you want to make this less sweet, you can adjust the amount of condensed milk and add it to your taste or to desired sweetness.
