Ingredients:
- 5 Turnips washed, peeled and cut into cubes
- 1 Green pepper (capsicum)
- 1 bunch of green onions (5-6 in a bunch)
- 4 green chillies
- 4 cloves of garlic
- 1 inch of ginger
- 1 onion
- 2 tomatoes
- 3 table spoon of coriander powder
- 1 teaspoon of roasted cumin powder
- 2 table spoon of Mango powder (amchoor)
- 2 teaspoon of cayenne pepper
- 1 teaspoon of Turmeric powder
- Salt to taste
- 1/4 cup of cilantro. chopped divided in two parts
- 1/4 cup of vegetable/cooking oil
- 1 teaspoon of cumin seeds
- 1/4 teaspoon of hing
- 2 bay leaves
- 2 pods of dried red chilies
Method
- Pressure cook turnip cubes
- Mash the turnips to paste but not very fine (use potato masher)
- Chop onion, garlic, ginger and green pepper together in food processor set aside
- Crush tomatoes in food processor, add part of cilantro and chop together
- Heat oil in the pan
- Add cumin seeds when oil is hot, when these crackle, add hing powder, red chili pods and bay leaves
- Add onion, ginger and garlic paste
- Saute until golden brown.
- Add crushed tomatoes
- Add salt and stir and cook .
- Add all the dry spices and and mashed turnip.
- Add chopped green onions.
- Cook until all water evaporates.
- Garnish it with remaining cilantro and serve it with Naan or Chapaties.
