Sourdough Pancakes with Secret Ingredients

My mom absolutely loves Pancakes in this country.  She is not feeling well lately and she requested that if I would make pancakes for her.
So of course her wish was my command. Then I suddenly thought why not use the sour dough starter in my fridge and make totally different pancakes than the traditional ones.  I came across few recipes that I liked on line and of course I have to modify them to come up with my own version. I have two jars of Sourdough starters in my fridge. I decided to make sourdough pancakes.

They turned out perfect with excellent texture and taste. This recipe yields about 6 pancakes.



Ingredients:
  • 1 cup sourdough bread starter
  • 1 cup AP  flour (you can use any flour: whole wheat or buck wheat flour)
  • 1 egg
  • 3 tablespoons of Organic Coconut brown sugar (you can use regular brown sugar or granulated sugar or even Jaggery (Jaggery, you will have to microwave it with some water to melt it and make it syrupy)
  • 1/2 tsp of salt
  • 2 tables spoon of melted butter or oil. (if using salted butter you can omit the salt)
  • 1 tsp of baking soda
  • 1/2 cup of coconut milk/coconut water or regular milk or just plain water whatever you have (I used coconut water, you may need up to 3/4 cup these depending on consistency of your starter) 
  • Cooking spray and butter to make pancakes on griddle.

For toppings:
  • Butter if you desire
  • Maple or any fruit syrup
  • Seasonal fruits
  • Cool whip or non dairy topping
I topped them with canned pineapple tidbits, mandarins slices and fresh persimmons along with non dairy topping and of course Maple syrup, but you can use any other fruits and any fruity pancake syrup.
Method: 
  • In a bowl mix flour, salt and baking soda.
  • In a separate bowl mix melted butter, egg, brown sugar, and sourdough stater.
  • Whisk it with fork and add flour mix.
  • The add coconut water to dilute it to pancake batter consistency.  Like I mentioned earlier you may have to add more or less liquid based on your sour dough consistency.
  • Heat the electric griddle to medium setting.
  • Spray with cooking spray and wipe it.
  • Add 1/4 to 1/2 cup of batter on griddle for each pancake depending on desired size of pancakes.
  • Put some butter around it.
  • Cover and cook  until the side is golden brown.
  • Flip and cook the other side until golden brown.
  • As you can see in pics that I like mine well done.
















































Serve hot with desired topping.

Repeat the process to make more pancakes on griddle. You can make more than one at a time. I have a small stainless steel griddle by Maxim that I absolutely love, can only fit two pancakes at a time. However as you can see I made only one at a time.
