Hearty Healthy Nutty Pancakes










Ingredients:

1 cup Oatmeal pancake mix (by Quaker)

3/4 cup milk

1 egg

1/4 cup almonds

1/4 cup walnuts

Butter to make pancake and for serving

Pancake syrup of desired flavor (maple, apricot, strawberry or raspberry)

This recipe makes about 3-4 pancakes


Method:


* Coarsely grind the nuts in food processor.

* Beat egg

* Add milk, ground nuts and pancake mix.

* Mix well

* Can add little more milk or water if batter is too thick

* Heat nonstick griddle on stove

* Pour 2 table spoon full of batter on it, spread to desired thickness of pancake.

* Turn the heat down to medium and put butter around the edges of pancake

* Cover the pancake and cook for about 1 min

* I like these pancake to be well cooked with brown edges, but you can make it to desired crispiness or softness.

* Flip it and cook the other side with little butter.

* Serve hot with butter and pancake syrup of desired flavor.
